Sinus surgery is a broad term covering many different types of procedures on the nasal sinuses, and whether your nose feels blocked afterward really depends on which procedure you have. These days, packing is often done with absorbable material placed only in the specific area operated on, which usually doesn't cause much breathing difficulty. If the procedure also involves correcting the nasal septum, silicone splints with built-in breathing tubes may be placed, allowing you to breathe through your nose with minimal discomfort during recovery.
In cases where traditional nasal packing or dressings are needed, some temporary discomfort is expected until it's removed. This can include nasal blockage, needing to breathe through your mouth for a bit, a sense of heaviness across the face and head, watery eyes, and a dry throat.
